🍒 Red fruit jam · 🫐 Jabuticaba · 🫘Tamarind Roast: light · Variety: Maragogipe (elephant beans) Process: natural Origin: Fazenda Santa Mônica 2, Cássia, Alta Mogiana, Brazil Altitude: 1160 masl · Producer: Jean Vilhena Faleiros Maragogipe Southern Boundaries - New Crop The Maragogipe is one of coffee's great rarities - a spontaneous mutation of the Typica variety, first discovered in Bahia, Brazil. Its oversized “elephant beans” are immediately recognizable, but it’s what’s inside that makes it extraordinary: a deep, jammy sweetness of red fruit and jabuticaba, with a tangy tamarind finish that lingers long after the last sip. Jean Faleiros grows this exceptional lot at 1160 masl in Alta Mogiana - a region known for its mineral-rich soils and ideal altitude for slow cherry development. The result is a light roast of rare complexity, prized by specialty coffee lovers worldwide. Best brewed as: Filter (V60, Chemex, Hario) · water 92°C · ratio 1:16 Small batch. Direct trade. Traceable to the farm.
