This coffee is a leftover of our Antwerp Coffee Week offering in our bars and really unique in terms of flavour and story. Taste notes: Cherry, cherry and cherry Rob says: Drinking this coffee from Jairo Arcila is like tasting coffee infused with intense cherry notes—especially maraschino cherry. It’s strikingly sweet, almost candy-like, and unlike anything you’ve had before. The real surprise isn’t just the flavor, but how naturally it seems to exist in the cup, making it feel almost unreal. But how did they do this? Well, the coffee is harvested in Quindio Colombia following a strict ripeness criteria, ensuring that only perfectly ripe cherries are selected. The coffee cherries are packaged in grain pro bags and transported to our processing center, La Pradera. Then, the coffee cherries undergo a dry anaerobic 48-hour fermentation, during this stage, real fresh cherries are added. The cherries transfer their delicate sweetness, and sparkling flavor to the coffee. By adding fresh cherries, Jairo creates a coffee with caramelized red fruits flavours, floral hints, and a lingering, nectar-like finish, giving our washed coffees a bright and lively character. Following fermentation, the cherries are pulped and thoroughly washed to remove the mucilage. Once coffees are washed, they are spread out in our elbas drying station. The cherries are carefully monitored and turned regularly to ensure uniform drying and to prevent overfermentation or mold. Drying continues until the cherries reach an ideal moisture content of 9.5% –11%, which is the perfect point.
