Ingredients & Method: We source exceptional decaffeinated coffee from La Plata in Huila, Colombia. Breaking industry norms, the decaffeination process happens at the source before export using a natural local cane process. Ultimately this means fewer food miles and greater traceability. The coffee is balanced and bright, with smooth notes of dark chocolate, smooth caramel and citrus rind. We don’t cold brew our coffee, but instead use an innovative flash-brewing technique. First, we brew the coffee with hot water, then we flash-chill it to extract and lock in the flavours and delicate aromas that you’d expect from fresh espresso. As coffee experts, we believe that hot water is required to deliver a perfectly balanced, complex brew. Hot water dissolves more of the coffee's volatile compounds, thus extracting both the acidic and bitter notes of the coffee, as well as sweetness. In comparison, cold coffee extraction (cold brew) mainly focuses on the sweet and can lose the full, rounded flavour of the coffee.
