Origin: Peru Region: Nuevo Belen, Amazonas Producer: Roiber Becerra Elevation: 1700 - 1900 masl Variety: Geisha Process: Anaerobic Extended Fermentation Natural The fermentation is done according to the weather, if it’s a little rainy 75 or 76 hours and if it’s very sunny then 68 to 70 hours, but usually 72 hours. This first step is done in cherry, in timbos (plastic tubs), sealed without oxygen. After the fermentation, the cherries are taken to the solar dryers where they dry for a minimum of 30 days, during this period they are constantly being monitored and moved to different levels within the solar dryer according to the moisture levels. The coffee finishes drying once the 11 - 11.5% moisture levels is reached Roasted for: Filter -- From the highlands of Nuevo Belén in the Lonya Grande District of Peru’s Amazonas Region, Roiber Becerra is part of a new generation of dedicated coffee producers focused on quality at every stage of production. On his farm, Finca Morales, Roiber cultivates varieties including Geisha, Marshall, and Caturra, with a strong emphasis on soil health, careful farm management, and meticulous pre- and post-harvest practices. Roiber is deeply committed to the long-term future of his farm and is currently investing in an extensive agroforestry system while expanding his Geisha plantings. Every aspect of Finca Morales has been thoughtfully designed - from the organisation of shade trees and intercropping systems to varietal selection and processing infrastructure — all with the goal of producing exceptional coffees that clearly express their origin and craftsmanship. In August 2023, Khipu Coffee visited Roiber at the Norcafe office in Lonya Grande before travelling to Finca Morales. Following a cupping session and tour of the farm, they were deeply impressed by the precision and care evident throughout the entire operation. That same attention to detail carries through into the cup, resulting in coffees with remarkable clarity, complexity, and character. Together with his family, Roiber hopes roasters and coffee drinkers alike can taste the dedication behind every lot they produce. Looking ahead, they plan to continue growing the farm and further expand their production of high-quality Geisha coffees. -- This coffee is sourced through our partner Khipu, led by Mark Russell and his cousin who is originally from Peru. We have known Mark for a long time and this has been a partnership in the making for a couple of years. As with all origins that we source from, we aim to find specific partners who share similar core values to our with whom we can develop a long term relationship. Khipu’s approach focuses on long-term partnerships at origin, prioritizing consistency and mutual growth year after year. They actively seek out producers who have little to no prior export experience, helping introduce their coffees to international markets. This often leads them beyond well-known regions to places like La Libertad, Amazonas, San Martín, and Huancavelica, with plans to expand further. Operationally, Khipu currently works through an established export business lead by Mark's cousin in Peru, enabling access to financing and logistics. At the same time, they are working toward establishing Khipu as an independent entity in Peru. They are also developing plans for a micro-mill and quality control facility in Lima, in collaboration with industry professionals, to support future processing and blending. To date, Khipu’s work at origin has centered on reliability - paying upfront, maintaining timely payments, and returning each harvest. Since 2022, they have collaborated with around 60 producers, including smallholders, cooperatives, and estates. Through this, they continue to build a focused network of long-term partners, with farms like Finca Morales and Finca Artemira standing out as key examples.
