Don Octavio Pacamara Natural is a specialty coffee produced by José Octavio Umaña Valdivieso on his family-owned farm, Don Octavio, located in the Alotepec-Metapán region of El Salvador at an altitude of 1,650 meters. This coffee is of the Pacamara variety and undergoes a natural processing method, where ripe cherries are dried with the fruit intact, enhancing its fruity characteristics. The farm has been in the Umaña family for over 150 years, historically used for various agricultural purposes. After a period of abandonment due to regional instability, José Octavio returned in 2012 with a vision to reforest the land and cultivate high-quality coffee. Starting with certified Pacamara seeds in 2013, he implemented meticulous cultivation and processing techniques, including drying beans on African beds. His dedication has led to recognition in the Cup of Excellence competitions in 2019, 2020, 2021, and 2024. In the 2024 Cup of Excellence, the Don Octavio Pacamara Natural received a score of 89.34, securing the 4th place in the Natural category. This coffee is noted for its fruity freshness and citrusy feel, with tasting notes highlighting flavors such as orange, cocoa, and caramel, offering a medium body and a fruity aftertaste.
