Timor-Leste is one of specialty coffee’s quieter stories. The country grows most of its coffee in the Ermera, Ainaro, and Liquiçá districts at altitudes between 800 and 1,500 metres, on smallholder farms that work under a canopy of shade trees the way coffee was grown everywhere a century ago.
The country’s hidden contribution is Hybrido de Timor — a natural cross between Arabica and Robusta that emerged here in the twentieth century and gave rise to disease-resistant varieties now planted across Latin America. That legacy shows up in your cup of Colombian Castillo more often than it shows up on a Timor-Leste menu.
The cups themselves lean earthy, nutty, and full-bodied. Not flashy. Honest. Worth seeking out.
