We are proudly serving "great coffee without caffeine", something we have been looking for long time before releasing our Blue Skies decaf. It took some effort and we finally found an organic certified lot that got us excited! Sourced and decaffeinated in one country, Mexico. To keep the carbon footprint low, in line with our focus for sustainable coffee. The coffee is decaffeinated by a Mountain Water process to preserve the coffees original flavour. The coffee is soaked in a steam bath with water from a local source. This enables to extract both caffeine and aromas and flavours. When passing this solution through a filter, caffeine is separated while the other quality attributes are returned to the coffee beans which then get dried. Great as straight espresso and americano or as your base for a milk drink. Blue Skies will adapt to the harvest seasons and therefore changes its component once in a while to keep it fresh and exciting. Current Component Mexico Capitan
