Here, Bekele cultivates traditional Ethiopian varietals 74158 and 74110 beneath the shade of intercropped fruit trees, creating a diverse farm ecosystem that helps the cherries develop slowly and evenly. At his Hache farm, Bekele focuses on natural processing, where ripe coffee cherries are carefully handpicked and then dried on raised beds for around 16 days, allowing the fruit sugars to fully develop in the beans. The result is a coffee that feels rich, expressive, and slightly wild — packed with berry sweetness, winey depth, and a smooth sugary finish.
