Proud Mary opened in Collingwood in 2009 under founder Nolan Hirte, and has grown into one of Australia's most ambitious specialty roasters with a sister roastery and café in Portland, Oregon. The Collingwood and Aunty Peg's sites are pilgrimage spots. Proud Mary buys deep into experimental lots: anaerobic naturals, yeast-inoculated ferments, Gesha varieties. They were among the first Australian roasters to publicly fund farm projects in Ethiopia and Colombia.
