Ethiopia is currently one of the leading producers of Arabica coffee, grown at altitudes between 1,500 and 2,200 meters above sea level. Coffee is an integral part of the country’s cultural identity and is predominantly processed using the washed method. A distinctive feature of Ethiopian coffees is the term Heirloom, which does not refer to a single botanical variety, but rather to a collective processing system in which the harvests of multiple farmers and therefore multiple varieties are combined and processed by a cooperative. To compensate for the limited varietal traceability, a single denomination is used. In the cup, the coffee presents a delicate body and a fine, elegant texture. On tasting, the gentle earthiness of jasmine stands out, accompanied by a light acidic note. The aftertaste reveals a sweet flavor reminiscent of caramel.
