The Sidama region is renowned for its balanced and fruit-forward cup profiles, but the coffee produced by selected smallholders in the area stands out for its sweetness, clarity, and vibrant fruit expression. During the harvest season (November to January), ripe cherries are hand-selected and spread out on African raised beds, where they dry naturally under the sun. The cherries are turned regularly to ensure uniform drying and a clean cup. Local temperatures range from 12°C to 28°C, while the terroir consists of volcanic, nutrient-rich soils, ideal for the slow development and ripening of Arabica trees.
