El Diviso Over the past year, brothers Nestor and Adrian Lasso took charge of their family farm and made a bold decision: instead of following the path of traditional coffee cultivation, they shifted their focus toward experimentation and innovation within the specialty coffee sector. Partnering with fellow producer Jhoan Vergara, they launched El Diviso—a joint venture that unites two farms: El Diviso (Lasso) and Las Flores (Vergara), located near Pitalito in Colombia’s Huila region. Their collaboration expanded further through a partnership with CATA Export. Together, they began an ambitious exploration of fermentation methods, creating processing protocols with a clear goal: to link their coffees directly with the global specialty market and reshape the way Colombian coffee is perceived and enjoyed worldwide. Processing Only fully ripe cherries are hand-harvested. They are disinfected and floated in water to remove impurities and low-density beans. A final manual selection ensures that only optimal cherries are processed. Whole cherries undergo a 14-hour oxidation process to enhance complexity and flavour development before being depulped. A 60-hour anaerobic fermentation is conducted, followed by a 12-hour submerged fermentation using its mosto (fermentation juices) from previous batches. Drying takes place under carefully monitored conditions to maintain humidity control and preserve quality. Temperatures never exceed 38 °C, and the process continues until the beans reach 10–11% moisture content.
