Founded by Antony Watson and Sofia Goncalves, Olisipo Coffee Roasters takes its name from Lisbon's ancient Roman name; Watson's cycling expedition from the UK to Ethiopia, the birthplace of coffee, shaped the roastery's focus on sourcing directly from small, independent producers.
