A natural hybrid of Red and Yellow Bourbon, it is prized for the striking pink hue of its ripe cherries and a flavour profile that leans sweet, complex, and intensely aromatic. It is challenging to cultivate even in ideal conditions, making each well-executed lot a genuine rarity. For this lot, only the ripest cherries were hand-selected and processed at Cofinet's La Pradera facility. Cherries underwent a 72-hour dry anaerobic fermentation with smashed roses added to the oxygen-free environment, allowing their floral aromatics to infuse the coffee at the cellular level. After fermentation, the coffee was pulped and honey-processed, then dried on raised beds below 35°C until reaching optimal moisture. The result is a coffee that is deeply floral without being perfumed, with a refined sweetness and lingering complexity. Expect notes of Turkish delight, rose water and ripe fig, with a silky body and elegant, tea-like finish. 100g & 200g bag size only. Prefer it as espresso? We also offer this coffee blended 50/50 with a naturally processed Brazilian from the Cerrado region of Minas Gerais.
