Clean and quietly complex, this coffee comes from Adame Kebele in Ethiopia’s Gedeo Zone, a place long known for producing some of the most expressive coffees in the world. This is Ethiopia in its purest form. No shortcuts. Just clarity. Origin & People Zinabi is the work of around 800 smallholder farmers, each tending less than a hectare of land. Small gardens, deeply rooted knowledge, and generations of experience—this is where the magic begins. Grown at 1800–1900 metres above sea level, these heirloom varieties develop slowly under a natural shade canopy. The region’s red-brown, well-drained soil, combined with steady rainfall (1800–2000 mm) and warm, stable temperatures (22–27°C), creates a near-perfect environment for coffee to thrive. Here, nothing is rushed. And you can taste it. Processing – Precision in Simplicity Zinabi is a fully washed coffee, handled with care from cherry to parchment. After harvest (mid-October to January), ripe cherries are selectively picked and delivered to the washing station. Fermentation runs 36–48 hours, adjusted depending on weather—just enough to break down mucilage while preserving clarity. The coffee is then washed clean and moved to raised African beds, where it dries for 10–15 days. Constant raking ensures even drying, while careful covering during midday heat and overnight protects the structure of the bean. No overworking. No overthinking. Just precision.
