A one-person roastery at Dunhill Ecopark in Co. Waterford, run by a former Irish Army soldier whose postings in Lebanon, Liberia and Chad got him into coffee. Started in 2017, added wholesale accounts in 2018, upgraded to a 15kg drum roaster in 2019 and went to direct online sales in 2020. Sourcing, roasting and packing are all done by one person.
