Honduras became Central America’s largest producer while nobody was looking. The specialty story took longer to catch up, but the farms in Marcala, Copán, and Santa Bárbara have been producing excellent coffee for years — roasters just started paying attention around the last decade.
Honduran specialty tends toward sweet, fruity, clean profiles — think red apple, cocoa, honey, sometimes a lifted berry note from well-processed naturals. Altitudes from 1,200 to 1,800 metres, with a lot of Bourbon, Catuaí, and increasingly Pacas and Parainema.
The prices are still reasonable for the quality, which is another way of saying Honduras is one of the better value origins in the specialty market right now.
