Phil & Sebastian was founded in 2007 by engineers Phil Robertson and Sebastian Sztabzyb, who started roasting at Calgary Farmers' Market with a homebuilt roaster before opening their first cafe in 2009. The roastery is known for an engineering-first approach to extraction and quality control, and operates a direct trade program with producers in Colombia, Ethiopia, Kenya, Honduras, and Costa Rica. They roast on a Loring S35 and supply some of Canada's most respected cafes. The company runs multiple cafes across Calgary and Toronto.
