Thailand’s specialty coffee scene has grown up mostly in the north — Doi Chang, Doi Tung, and the hills around Chiang Rai and Chiang Mai. The country’s coffee history runs in parallel with the royal projects that replaced opium poppy cultivation in the 1970s, and the transition to specialty-grade Arabica is a more recent story on top of that.

The cups are often fruity, sweet, and clean — think tropical fruit, stone fruit, and a light-to-medium body. Catimor is common, with increasing amounts of Typica, Bourbon, and experimental crosses. Honey and natural processing are especially popular with Thai producers, many of whom have made strong contributions to the wider Asian specialty movement.

Supply is small and shipping is tricky. When a Thai coffee appears on a European menu, it’s usually worth the surprise.
