A Tokyo roaster working almost entirely in washed micro-lots, with named producers including Kotowa, Janson Estate and Fincas Miersch. The Akasaka site houses the roastery and a cafe that serves the whole single-origin line-up as espresso on a Decent DE1. Kitanomaru near Edo Castle is a reservation-only tasting room.
