This very round and balanced decaf convinced us with a lot of sweetness, clarity, and some slightly fruity notes with overall moderate acidity. The coffee is produced by a number of communities in the Frailesca region, located around the Reserva Biosfera El Triunfo in southern Chiapas, and decaffeinated using the Mountain Water Decaf process, which uses pure water from Pico de Orizaba to remove caffeine from green coffee beans without chemicals. This method preserves the flavor and aroma of the coffee while removing up to 99% of the caffeine.
