Melao This lot comes from small coffee producers in the fertile mountains of the Huila region and is specially selected by Caravela exporters to be a complex and decaffeinated version that reflects the typical “Melao” (a syrup made with melted panela sugar and water). About this coffee Over the past few years, many coffee producers in Huila have planted Pink Bourbon over the past 10 years, as it consistently produces high-quality cups regardless of the processing method (washed, honey, or natural). It has adapted well to climatic changes and has not been significantly affected by pests and diseases such as leaf rust, maintaining a good production yield. Processing The coffee has been processed using the sugarcane decaf method, where the caffeine is naturally removed with sugarcane-based ethyl acetate. The process takes place in Colombia, close to the coffee’s origin, and preserves the aromas and flavour profile exceptionally well. The result is a decaffeinated coffee that tastes like real coffee – smooth, sweet, and balanced.
