Rebecca and Lucas founded ilse in 2019 and roast in North Canaan, Connecticut. They publish lot-level transparency data for each coffee and run two cafes — the roastery on Railroad Street in North Canaan and a second on Railroad Street in Great Barrington, Massachusetts.
