The LasPulgas farm is located in the department of Planadas, in the southern part of the Tolimar region, deep in the foothills of the central Andes mountain range of Colombia. The farm’s owner is Ivan Milano, who inherited the farm from his father at the age of 20. Through education he absorbed all the wisdom of coffee cultivation and follows his parents’ passion. He gradually acquired additional plots of land from his brothers, consolidating them into a productive unit. In addition to traditional varieties he cultivates Tabi, Pink Bourbon, Gesha, and F8 are grown, adding its unique character to the farm’s rich palette. Up to 15 skilled workers carefully select only the ripest cherries during the main harvest; ensuring quality is maintained from plant to cup. The harvest of the coffee was done in a very selective manner; only ripped cherries were collected. Coffee was then selected by density and kept in tank, still in cherries, for 24 hours. Then the coffee was de-pulped and fermented the tanks for 50 hours. After the coffee beans were washed and put on the ventilated roofs, where were dried carefully for 17 to 22 days, depending on the weather conditions, and regularly turned. All the process is monitored and controlled, to be in the position to replicate in the future.
