Euan and Sara spent seven years planning the roastery before opening it at Hatston, outside Kirkwall, in 2016. Euan had worked at other Scottish roasteries and run a catering supply business in Orkney for twelve years. Espresso was the first target of the range. After Euan's death, Roger took over the roasting.
